Cos & Radish Salad with Herby Buttermilk Dressing


This is one of my favourite salads. It is extremely easy, quick and cos and radish always seem to last really well in the crisper so it’s a good throw-together salad when you haven’t been to the market in a while. 

The buttermilk in the dressing can be substituted if you don’t have it hanging in your fridge. Sour cream or creme fraiche watered down with some lemon juice, salt and water can replace it pretty comfortably, just make sure to mix it until very smooth and no lumps remain.



Ingredients:

4-6 baby cos hearts
 6-8 radishes
1 cup of buttermilk
1 tablespoon of dijon mustard
1 lemon
small handful of dill
small handful of mint
small handful of parsley
salt & pepper




Method: 

In a glass jar, add your buttermilk, dijon, lemon, herbs, salt and pepper and shake until well combined. There should be no clumps of dijon left.

Quarter or halve your cos hearts longways and do the same with your radishes, pour over your dressing and voila!
