Crispy Chickpeas, Chilli Zucchini, Chicory & Lemon


I first made this when I was desperately trying to make a salad but didn’t have a lot of veg hanging around in my fridge.

If you plan on making this ahead or keeping leftovers, keep the chickpeas separate from the rest because they will lose their crisp, which is clearly the main feature of this salad.



Ingredients:

1 small zucchini
1 can of chickpeas
4 tablespoons of veg oil/grapeseed oil
1 lemon
A small bunch of chicory or any other bitter green or leaf
1 red chilli or 2 teaspoons of dried chilli flakes
2 teaspoons of apple cider vinegar
1 tablespoon of olive oil
Pinch of salt





Method: 

In a fry pan, heat your oil until very hot. Meanwhile, drain and rinse your chickpeas, patting them dry with a clean tea towel or paper towel afterwards. 

Fry your chickpeas in the oil until very crispy! 15 ish mins. Spoon out onto paper towel and salt generously.

Using a vegetable peeler, peel your zucchini longways into ribbons. Squeeze over lemon juice and add chilli flakes, toss to combine.

Roughly chop your greens, toss with vinegar and olive oil.

Combine everything together and eat immediately.
