Harissa Carrots with Mint & Greek Yoghurt


My Mum and I often make these carrots for Christmas lunch. They are very easy, don’t take up too much space in the oven and are delicious. 

If you don’t like spice, halve the amount of harissa. Make sure to save the oily harissa that’s left in the pan after roasting to drizzle over the top. 

The raw garlic in the greek yoghurt adds a different kind of heat the works so nicely with the harissa.


Ingredients:

2 tablespoons of harissa paste
3 tablespoons of olive oil
pinch of salt
pinch of pepper
1/3 cup greek yoghurt
1 lemon, zest and juice
Small handful of mint
1 clove of garlic, crushed




Method: 

Preheat your oven to 220 C.

Clean and trim your dutch carrots. Don’t remove all of the green, they are yummy too. Keep between 1-2 inches of the green on them. 

Rub generously with harissa, oil and salt and cook for 1 hour in the oven.

To serve, combine greek yoghurt, pepper, crushed garlic and lemon juice and smear over the plate. Top with carrots, Sprinkle with lemon zest and fresh mint.
